Personal responsibility is a complicated thing. Environmentally, it's more destructive to eat bananas imported from the Caribbean than locally raised organic meat. Convincing individuals to make the sort of dietary choices that will actually make an impact is a matter of prolonged education, and on top of that, just isn't possible without making big, broad environmental changes (bringing down agribusiness) at the same time.
I've been a vegetarian for fourteen years—about half of my life. I don't drive. For someone living in the First World, I have a relatively light ecological footprint. I'm still probably going to get cancer because I'm sucking on smog every day. That's the limit of individual responsibility.
