It's a celebration of smiting a bunch of Persians. Which, given that the Persians were trying to annihilate the Jews at the time, is understandable. There's a very nationalistic character to the celebration, though. Plus I've heard that the shape of hamantash is supposed to reflect a rather crude caricature of Haman.
