OM NOM and also NOM
Sep. 25th, 2011 09:45 amI'm not saying that my life is awesome and you should want to be like me, but here are pictures of a S'mores pie that
lienne,
cupric_acetate, and I baked yesterday:

It was about the most awesome thing I have ever put in my mouth.

Date: 2011-09-25 02:14 pm (UTC)Graham crumb crust, pre-baked.
The brownie filling has semi-sweet chocolate, flour, brown sugar, two eggs, vanilla extract, butter, cinnamon, and cloves in it. You melt the chocolate and butter together in a microwave, wait until it's lukewarm, then mix it into the other stuff until brownieness is created. That goes in the pre-baked crust and gets baked for about a half an hour at 325°.
Then you take it out, put some chocolate shavings on top, and smear marshmallow fluff over the top. (I was pleased to discover that marshmallow fluff is actually a thing I can eat!) Sprinkle more cinnamon on top. Turn the oven onto broil and stick it back in for a few minutes until things start to turn brown but before they turn black.

Date: 2011-09-25 03:00 pm (UTC)Unfortunately, vegans can't eat marshmallow fluff because of the egg whites in it; fortunately, there's Suzanne's Ricemellow Creme.
Also, there are finally a few versions of honest-to-god vegan marshmallows that beat the pants off Campfire™ marshmallows any day. Dandies™ from Chicago SoyDairy are the clear winner in verisimilitude, with a shape, texture, and even size perfect for toasting. Sweet and Sara makes a denser, cube-shaped marshmallow which is dreamy; they have a vegan s'mores confection about the size of a Scooter pie that's amazing—and also available in peanut butter flavor!
Vegans like junk food too; this recipe can and will be veganized.

Date: 2011-09-25 02:44 pm (UTC)1/3 cup flour
1/8 tsp salt
4 oz unsweetened chocolate (we used semi-sweet)
1/2 cp butter
1 1/4 cp packed light brown sugar (we used demerara)
2 eggs
1 tsp vanilla extract (we probably used more than this because
1/2 cup semisweet chocolate chips
Our own addition: about 1/8 tsp cloves and 1-2 tsp cinnamon (we didn't measure those either)
Mix the flour and salt together, nuke the chocolate and butter until they melt (stir as appropriate), wait until the resulting bowl of deliciousness is lukewarm, whisk in the sugar, eggs, vanilla, and then stir in the flour. We added the spices at this point but you're probably better off stirring them into the flour before you add it. this is also when you put the chocolate chips in.
pour the delicious goo into your pre-baked crust and bake it for half an hour at 325 F, until you can stab it with a toothpick and it won't bleed. optionally, shave another ounce of chocolate on top (I think I'd skip this if I did it a second time). as Sabs directed, cover it in marshmallow fluff and broil until said fluff is browned but not charred. we sprinkled more graham crumbs on top first but they are what made those ugly black char marks so you might want to skip that too.
and then you have the most delicious of pies!

Date: 2011-09-25 04:22 pm (UTC)I know your life isn't easy so I wouldn't say I want to be you, but you have certain qualities I don't have so much of that I often admire. There are some respects in which I was more like you. You don't make it look easy by any means -- I definitely understand that it's not -- but you make it look worthwhile.

Date: 2011-09-25 05:34 pm (UTC)OTOH, my vegan cupcakes book does include a S'Mores cupcake recipe. But I don't think it's really quite as decadent as that looks.
