Awhile ago I had some potatoes and let them go too long and they sprouted, so I planted them, and they grew new potatoes, which for some reason surprised me a great deal.

I got overly frustrated with life this morning and took my frustrations out by weeding rather than murdering an elected official, and dug up some of the potatoes while I was at it:

Then I roasted them with some tofu and mushrooms and fried up some kale and look:

Anyway, delicious. The potatoes were the one thing in my garden that was an unmitigated success this year, and they were kind of an accident.

Congrats, that's very cool! We also had some accidental potatoes this year, in that we tossed out some small potatoes that had started to sprout and turn green, but some non-human animal decided that the trash was not the place for the potatoes, and so they removed them and deposited them by our back porch. By the time we noticed them, they were growing happily under the leaves so we've left them to do their thing.

Oh that's interesting. I find them really easy to cook. What don't you like about cooking them? (I am always here for cooking discussions. Or I could STFU.)

They do take longer to cook than most vegetables. It's their internal density. You can either start them first (when I'm cooking multiple veggies I add each at a different time anyway) or cut them smaller (but that risks disintegration).

Laziness inspires efficiency. ;)

I sound all Organized but really when I'm cooking vegetables together I just start by cutting up the longest cooking/the onions and throw that in the pot, then cut up the next and throw it in, and so on. The time it takes to cut up each one gives the ones in the pan a staggered head start. This might not work so well with someone who is faster at chopping than I am.

I couldn't grow anything but poppies and garlic in my garden this year because the deer have completely overrun the neighbourhood. But I have some window boxes on railings where they can't go (until they learn stairs) and the beans were done, so I planted some sweet potato sprouts from some that had tried to grow out of the drawer. They're doing fine, and even if I do not have tubers (the miniature vegetable harvest each year is a laff riot) there will be nice leafy vines.
