According to an Italian lip-reader who was shown the clip by BBC News at 10, he wished Zidane "An ugly death for you and all your family". On the day Zidane learnt that his mother was seriously ill.

I heard, among other rumours, that it was a Your Mom joke. Which, under the circumstances, would still be offensive.

I've just heard on Radio 5 that the Sun got their own lipreader, who says that Mattarazzi said "You're the son of a terrorist whore". And if the Sun says it, it must be true.

But they were also saying on R5 that they were asking the lads around the North African estates around Paris, and they were all convinced it must have been a reference to his Muslim and/or Arab background (which was my first thought too), and that Zidane's response was quite right.
