This is very bad for you, dead easy to make, and super-tasty. The recipe is Southern Fried Vegetarian "Chicken" by Jolina Hackett, from Your Guide to Vegetarian Food. Given the amount of soy that KFC puts in their chicken, I don't think it really tastes that different from the meat stuff.

What you need
* 1 tsp salt or seasoned salt
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp black pepper
* dash cayenne (optional; I used more than a dash, of course)
* 1 1/2 cups flour
* 1/4 cup nutritional yeast (optional; I didn't have any and it turned out just fine)
* 1/4 cup prepared mustard
* 2 tbsp baking powder
* 1/2 cup water
* 1 lb seitan or other chicken substitute, cut into 1-2" square pieces (I used the stuff you get from King's Café)
* oil for frying

What you do
In a medium to large bowl, mix together the salt, onion powder, garlic powder, flour, black pepper, cayenne and nutritional yeast.

In a separate small bowl, whisk together the mustard and water. Add 1/3 cup of the flour mixture to the mustard mixture and combine well.

Add baking powder to the flour mixture and combine well.

Coat pieces of seitan or mock chicken with the mustard batter, then coat each piece with the dry flour mixture.

Fry chunks of "chicken" in the oil on medium-high heat in a large skillet for 3-5 minutes, turning once until golden brown. Drain on a paper towel, serve with ketchup or BBQ sauce and enjoy! (I served with hot sauce.)

Tip: If your chunks are turning brown or black rather than a crispy golden brown, your oil is probably too hot! Reduce the heat a small amount and try again.

Oooh! I know how to make jam and it's really easy! Do you do weighing scales or measuring volumes there? If you do scales, just weigh the fruit, stick in an equal amount of (caster, but granular works too) sugar, and boil it until it's sticky. Seriously, that is all you need to do. <- From my gran's school of cooking (now closed, meh).

Also, want foodz. Especially mango. And chicken, and strawberry pie. OMG. I have to stop living on soup and readymeals.

For the record, here is (roughly) what went into the mango salad:

2 green mangoes, julienned (more or less)
1 English cucumber, likewise more or less julienned
About 1/4 cup of chopped fresh cilantro

Dressing:
2-3 Tbs. seasoned rice vinegar
2 Tbs. brown sugar
1 tsp. crushed chillies (didn't have any fresh hot peppers on hand)
dash of salt

I'd meant to include thinly sliced Spanish onion (or purple, as Zingerella suggested), but forgot it.
